This is not only the case in great restaurants but in home kitchens as well. Maple has its place in comfort food as much as in refined cuisine. A flavour-enhancer par excellence, maple bears the distinct advantage of being a beneficial replacement for sugar and all other usual sweeteners in any recipe.
For most recipes, maple syrup can easily be used to replace an equal amount of sugar. To substitute for a cup of sugar, just reduce the quantity to 60 ml of liquid in the recipe. If syrup is to be used to replace a liquid sweetener like honey or agave syrup, just keep the quantity the same.
How to replace sugar with maple syrup
250ml of sugar = 180ml of maple syrup. This method works for most recipes. It may not, however, be suitable for pastry recipes that use large amounts of sugar.
