If you want to make someone special happy for christmas, we have an idea: how about our Discovery trio to get to know all the varieties of happy maple, plus a homemade treat that comes from the heart but is easy and quick to prepare? These cookie balls are ready in a snap. When you pack them in a Christmas paper bag, store them in the fridge until you're ready to give them away so the balls don't get soft.
Ingredients
2 Tsp flaxseeds
100g oats
170g peanut butter or any nut butter
3 Tsp happy maple Goût Robuste
vanilla extract
50g chocolate chips or raisins or any dried fruit, chopped or shredded coconut
salt
How to
In a blender or food processor, grind flaxseed as finely as possible.
Add oats and grind into a coarse meal.
In a separate, medium-sized bowl, stir together peanut butter, maple syrup, vanilla and salt.
Add flaxseed and oats and knead with your hands to combine. If mixture is too soft to form balls, you can add more oats. If mixture seems to dry to form balls, add a little more peanut butter.
Mix in chocolate chips and/or other add-ins. Roll into 2,5cm balls and chill in refrigerator until firm. Store tightly covered in refrigerator or freezer.
