Green summer salad with a big wow effect

For decades, salads have been the essential accompaniment to all grilled dishes. Its secret: it constantly reinvents itself. Discover here a real firework of consistencies, colours and aromas with this green summer salad. We found this delicious recipe in the magazine of Fooby in Lausanne, where you can now find our organic maple syrup, happy maple rich taste. Nothing could be simpler than replacing honey or sugar with happy maple syrup ✨


Ingredients

  • 200g courgettes, grated into approx. 2mm thick

  • 250g snack cucumbers, grated into approx. 2mm thick

  • 50g baby spinach

  • 50g arugula

  • 125g blueberries

  • 100g crumbled feta

  • 50g toasted hazelnuts, coarsely chopped


  • 1 tsp mustard

  • 2½ tbsp of white balsamic vinegar

  • 4 tbsp of olive oil

  • 1 tsp happy maple organic maple syrup, rich taste or delicate taste (depending on your taste)

  • pinch of salt and pepper

Preparation for the green summer salad

  1. Salad dressing: mix the mustard, vinegar, oil and maple syrup in a salad bowl, mix well. Add the zucchini and all the ingredients up to and including the blueberries, combine.

  2. Dress the salad and sprinkle with feta and hazelnuts. Enjoy!
