Poké bowls might quite possibly be one of our favourite dishes. Quick, healthy, easily customisable and almost guaranteed delicious with a bullet proof sauce....
Assembling the perfect poké bowl could be a bit of an art. Our favourite ingredients include a quinoa / beluga lentil base topped with carrots, cucumber, avocado, mango, purple cabbage, edamame, green onion and a good sprinkle of sesame seeds.... But you could also top it with animal proteins or tofu... even halloumi is delicious in a poké bowl!
We're excited to share our "famous" poké bowl dressing (or sauce) recipe with you today. It's literally never failed us, not even once. It's sweet, tangy, salty, with a distinct asian flavour. We LOVE it, and hope you will too!
Ingredients
2 tbsp sesame oil
1 tbsp canola oil
1-2 tbsp low sodium soy sauce or tamari
1/2 lime (squeezed)
1/2 tsp apple cider vinegar
1 clove of garlic (minced)
1-2cm piece of grated ginger (include more or less to taste!)
2-3 tbsp Happy Maple Goût Riche
Method
Toss everything together in a mason jar or shaker, and give it a good shake or stir! Enjoy on top of your poké bowl (but also works quite well on a massaged kale salad!)
