Pancakes are just a classic among all recipes with maple syrup and it's pretty much a match made in heaven. Pancakes are comforting, easy and quick to make and there's literally no one who would not enjoy them.
Ingredients for ten pancakes
240ml vegan milk
2 tablespoons oil of choice
1 banana
200g all purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
How to
Mash the banana until it is a puree consistency. Beat it together with the milk and oil until combined well.
Add all dry ingredients to a bowl, whisk them together, then gradually pour in the milk preparation, stirring as you go to work out the lumps. Stir until the batter is smooth, then leave to rest for 10 minutes before cooking.
While it rests, preheat your pan or skillet to medium.
Lightly grease the pan then pour the batter, about 1 small ladle full per pancake. Leave to cook until bubbles appear all over the top and begin to pop, then flip gently.
Allow to cook for 2 to 3 minutes until golden then remove from the pan and serve immediately.
