Maple roasted asparagus recipe

This maple roasted asparagus recipe is easy to prepare and can easily be added to a kid-friendly meal or as a delicious starter for the upcoming BBQ season.

Ingredients

  • 1 bunch of asparagus spears

  • 2 tablespoons bio happy maple syrup, goût robuste

  • 1 large pinch salt

  • 2 tablespoons dukkah spice blend

  • 1/4 cup crème fraîche

  • 2 tablespoons wild garlic pesto

  • 2 tablespoons vinaigrette (of your choice)

  • Zest of 1 lemon

  • Chopped mint, parsley, and fresh basil for topping

  • Chopped pistachios


How to

  1. Preheat your oven to 200°C.

  2. Trim the woody ends of the asparagus spears by snapping off the bottom inch or so. If the asparagus is very thick, peel the skin. Place the asparagus on a baking sheet lined with parchment paper.

  3. Drizzle happy maple on the asparagus. Sprinkle the dukkah spice blend and salt over the asparagus, ensuring it is evenly distributed.

  4. Place the baking sheet in the preheated oven and roast the asparagus for about 12 minutes, or until they are tender and slightly caramelized. Check them occasionally and give them a gentle shake to ensure even cooking.

  5. Once the asparagus is done, remove it from the oven and let it cool slightly. Arrange the roasted asparagus spears on a serving platter.

  6. Drizzle the vinaigrette over the roasted asparagus, followed by dollops of crème fraîche and wild garlic pesto.

  7. Sprinkle the chopped mint, parsley, and fresh basil over the asparagus to add a burst of freshness and herbaceous flavor. Top with chopped pistachios.

  8. Finally, zest the lemon directly over the asparagus, allowing the fragrant zest to enhance the dish further.

  9. Serve the maple oven-roasted asparagus immediately as a side dish or as an appetiser.
