A main dish of native Hawaiian cuisine, poke is basically diced raw fish (traditionally tuna, salmon, or octopus) marinated in Asian seasonings, served with rice and fresh vegetables. This Maple Salmon Poke Bowl is a delicious recipe filled with colours, vitamins and good vibes!
Ingredients for the spicy maple sauce
125 ml soy sauce
125 ml hoisin sauce
125 ml rice vinegar
2 tbsp sambal oelek
60 ml pure maple syrup from happy maple, goût riche
4 tbsp lime juice
4 tbsp roasted sesame oil
salt and pepper
Ingredients for the Maple Salmon Poke Bowl
300 g jasmine rice
500 g fresh salmon, cut into cubes
30 g sesame seeds
1 mango, diced
1 red pepper, julienned
2 ripe avocados, sliced
1/2 cucumber, julienned
2 carrots, julienned
4 green onions, minced
1/4 red cabbage, shredded
How to
Cook the rice according to package instructions. Allow to temper.
Combine all maple spicy sauce ingredients in a bowl.
Place salmon cubes into a mixing bowl with the spicy maple sauce, stirring gently to coat. Let them macerate 15 minutes.
In a frying pan, toast the sesame seeds dry for 2 - 3 minutes until golden brown and fragrant. Reserve.
Divide the cooked rice into four serving bowls. Place salmon cubes in the centre of each, on top of the rice. Arrange the rest of the ingredients nicely around the salmon and sprinkle with the toasted sesame seeds. Garnish with a light splash of spicey maple sauce and serve immediately.
