This Maple Vanilla Granola recipe is a great alternative to processed cereals for the whole family. You can serve this wonderful with sweet and creamy yoghurt, milk. You can top it with seasonal fruits, nuts and seeds.
Coconut meat and the oil derived from it, is antipathogenic due to its lauric acid content combined with other antioxidants present in it. Maple syrup contains a vast array of vitamins, minerals, antioxidants and other natural nutrients.
Ingredients
1 1/2 cup oats
1/4 cup unsweetened shredded coconut
1/4 cup ground flaxseed
1/3 cup pure maple syrup, happy maple goût riche (or goût robuste for a more caramel flavour)
1/4 cup melted coconut oil
1 tbsp vanilla extract
1/2 tsp cinnamon
Preparation of the Maple Vanilla Granola
Preheat oven to 150°C. Line a baking sheet with parchment paper.
Combine the oats, coconut, and ground flaxseed in a large bowl. Stir until evenly mixed.
Add in the maple syrup, coconut oil, vanilla, and cinnamon. Stir until well incorporated.
Spread the mixture out evenly on the prepared baking sheet to about 0.5cm thick.
Bake for 25–35 minutes, or until golden brown.
Remove from oven and cool for 10 minutes without touching the mixture. Then break up into smaller pieces and cool completely.
Serve immediately and to it with your favorite fruit, seeds, yoghurt or milk.
You can keep the Maple Vanilla Granola in an airtight container for up to a week.
