Ingredients Pistachio & Maple Sheet Cake
For the cake
240 grams all-purpose flour
100 grams shelled pistachios, finely ground
360 ml almond milk (or any milk of choice)
120 ml vegetable oil
240 ml happy maple syrup, Goût Riche
5 grams vanilla extract
5 grams baking powder
2.5 grams baking soda
pinch of salt
For the Pistachio Cream Cheese Frosting
225 grams cream cheese of choice
115 grams butter
60 grams shelled pistachios, finely ground
60 ml happy maple syrup, Goût Riche (adjust to taste)
5 grams vanilla extract
How to
For the cake
Preheat your oven to 175°C. Grease and flour a 20cm square sheet cake pan.
In a mixing bowl, whisk together the almond milk, vegetable oil, happy maple syrup Goût Riche, and vanilla extract.
In a separate bowl, combine the ground pistachios, flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix.
Pour the cake batter into the prepared sheet cake pan and smooth it out evenly.
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool completely in the pan before frosting.
For the Vegan Pistachio Cream Cheese Frosting:
In a mixing bowl, combine the cream cheese, butter, ground pistachios, happy maple syrup Goût Riche, and vanilla extract.
Beat the mixture until it's smooth and creamy. Adjust the sweetness with more syrup, if desired.
Assembling the Cake
Once the sheet cake has cooled, spread the pistachio cream cheese frosting evenly over the top.
Optionally, garnish the cake with additional chopped pistachios or pistachio pieces.
Slice in squares and serve.
