This single served peach pancake recipe is perfect for those days when you crave pancakes but don’t want to make a whole batch. The caramelised peaches are a touch of sun at every bite, deliciously caramelised with happy maple goût robuste, while the goût riche sweetens the pancake batter naturally 🤎
Single served Peach Pancake
50g flour
2g baking powder
5g linseed powder
15g happy maple syrup goût riche
Pinch of salt
5g melted butter or oil
100g milk
Topping
2 peaches

Cream cheese
Granola
Blueberries

Method
In a mixing bowl, combine the flour, baking powder, linseed powder, and a pinch of salt. Mix well.
Add the milk, maple syrup goût riche, melted butter or oil to the dry ingredients and combine well until a smooth pancake batter forms. Ensure there are no lumps. Let the batter sit for at least 5 minutes.
Heat a non-stick pan over medium heat. You can lightly grease it with some extra oil or butter if needed.
Once the pan is hot, pour the pancake batter onto the pan to form a single pancake. Use a spoon to spread the batter evenly into a circular shape.
Cook the pancake for a couple of minutes until bubbles start to appear on the surface. This indicates that it's time to flip the pancake.
Carefully flip the pancake and cook the other side until it turns golden brown.
Remove the cooked pancake from the pan and place it on a plate.
For the topping, slice the peaches into thin wedges or bite-sized pieces.
In a separate pan, add a drizzle of maple goût robuste and heat it up. Add the peach slices to the pan and cook them until they are nicely caramelized and softened.
Place the caramelized peaches on top of the pancake.
Add dollops of vegan cream cheese on the pancake.
Sprinkle some granola and fresh blueberries over the pancake to add extra flavor and texture. Add extra maple necessary.
